pancake mix

Serves: 12 guests, give or take how big they like their hotcakes.

Tools:

1 mixing bowl

1 sifter

whisk

Ingredients:

5 cups white flour – sifted

1/4 cup granulated sugar

1/4 cup baking powder

1 Tbsp fine salt

Mix:

Combine thoroughly all above ingredients. Use straight away or store in air-tight container. Recipe can be halved for smaller crowds.

To make pancakes:

Ingredients:

1 egg for 4 or less guests & 2 eggs for 5 or more.

1/3 to 1 cup milk – amount depends on how many you are serving.

splash of vegetable oil

drizzle of good vanilla

Mix:

Whisk together all wet ingredients. Add pancake mix one half cup at a time, whisking as you go until the desired thickness of batter is attained.

Pour in circles onto buttered nonstick pan or griddle. Cook on one side until they start to bubble in the middle then flip for a minute. Careful not to burn, gas stoves can be finicky. If they start to smoke just feed them to the pigeon’s.

Add ins:

chocolate chips / finely chopped chocolate

cinnamon

nutmeg

frozen fruit

Serve with:

syrup (if you can find it)

peanut butter

fresh fruit

butter

confectioners sugar
